Black Bean Burger

We get a lot of questions about what to do with the black beans available in our pantry. One of the recipes we love to turn to is a vegetarian black bean burger. Pick and choose from a wide variety of condiments, toppings, and sauces to make it your own.

1 can black beans (14 oz. drained, rinsed, and patted dry)
1 potato (peeled and chopped)
1 tablespoon oil
1⁄4 cup bread crumbs (or oat flour or nut flour)
1 egg
2 tablespoons ketchup (and/or mayo or BBQ sauce)

Preheat oven to 325ºF. Chop and boil potato as if making mashed potatoes. Drain water. Sauté olive oil, onion and garlic (if using) over medium heat until soft. Place all ingredients into food processor or mash until ingredients are almost completely blended. Form into patties (about 1/3 cup mixture for each). Place patties on lined baking sheet and bake for 10 minutes on each side. Or place on a medium heated skillet with butter or oil. Cook until toasted on both sides.

Optional spices: cumin, chili powder, paprika, garlic powder

Optional add ins: cheese, garlic cloves, bell peppers, mushrooms, chilis, jalapeños, corn, or seeds
