Sweet Heat Roasted Delicata with Apples

We love all kinds of winter squash, including delicata. Winter squash and apples are in abundance in the fall--and they go well together!

Winter squash is an excellent source of Vitamin A, most in the form of beta carotene. Vitamin A is a necessary for healthy eyes. Beta-carotene is also an anti-oxidant that may help protect your body’s cells from disease.

Winter squash is also an excellent source of Vitamin C and potassium.

3 delicata squash ((whole))
2 tablespoons brown sugar
1⁄2 teaspoon cinnamon
1⁄4 teaspoon clove
1⁄8 teaspoon cayenne
2 large apples (of your choice)
  garnish (optional: chopped dried cranberries, sweet onions, sweet or hot peppers)
  1. Preheat oven to 375ºF.
  2. Peel each squash.
  3. Slice squash in half lengthwise and scoop out the seeds and stringy flesh.
  4. Cut the squash into one inch cubes.
  5. Spray a baking sheet with cooking spray or grease it with a little oil.
  6. Arrange the squash on the sheet in a single layer.
  7. Toss the squash in the oil or spray with cooking spray.
  8. Sprinkle the spices on top, and add chopped apples and optional ingredients such as sweet onions or sweet or hot peppers.
  9. Bake for about 15 minutes, until they are soft and slightly crisp.
  10. Optional: garnish with chopped dried cranberries (do not bake the dried fruit, which will easily burn).
