Black Bean & Corn Salsa
Ingredients:
1 can corn, drained and rinsed
1 can black beans, drained and rinsed
1/4-1/2 red onion, finely chopped
1 garlic clove, finely chopped
(can sub for 1 tsp. garlic powder)
1/2 jalapeno, seeded and chopped (optional)
Juice of one lime
Sea salt to taste
Optional additions:
Handful of cilantro, chopped
Pinch of cumin powder
Pinch of coriander powder
Green onion, sliced
Bell pepper, diced
Avocado, diced
Tomato, diced
Directions:
1. Combine all ingredients, and whatever optional ingredients you’ll be using.
2. Mix well to combine.
3. Enjoy with chips, tacos, burritos, rice bowls, or alongside any savory dish.
4. Store in the fridge for up to 5 days. Tastes delicious as leftovers!
