Carrot Ginger Soup

Ingredients:

  • 1/2 tablespoon olive oil

  • 1/2 onion, chopped

  • 4 garlic cloves, smashed

  • 3 stalks celery, chopped

  • 1 bundle carrots, washed and chopped

  • Fresh grated ginger (start with 1/2 tsp. and add more to taste)

  • 1 can full fat coconut milk

  • Water or broth (start with 1-2 cups, adjust for to desired consistency)

  • Sea salt and black pepper to taste

Directions:

1. Heat a pot over medium heat.

2. Add olive oil, onions, salt and pepper. 

3. Cook for 5 minutes, until onions are golden.

4. Add the smashed garlic cloves and celery, and continue cooking for 3 minutes.

5. Add the carrots and ginger and stir, cooking for another 5-10 minutes or until carrots are soft. Add a splash of water as needed to loosen browned bits from bottom of the pan.

6. Transfer ingredients into a blender with the coconut milk and blend until smooth. Add more water if desired.

7. Season to taste with salt, pepper and ginger. Enjoy!
