Easy Kale and Onions

Ingredients:

  • 1 Tbsp. olive oil or butter

  • 1/2 onion, finely chopped

  • 1-2 garlic cloves, finely chopped or a dash of garlic powder

  • 1 head kale or collard greens

  • Salt to taste

  • Squeeze of fresh lemon juice 

Directions:

  1. Wash the kale (or collards) and remove the center rib.

  2. Finely chop the leaves and set aside.

  3. In a large pan over medium heat, warm the oil and add the chopped onion. Cook until soft and golden.

  4. Add the chopped garlic and a pinch of salt.

  5. Add the chopped greens and a splash of water. Stir and cover pan with a lid. 

  6. Cook for about 5 minutes. Stir and add salt to taste.

  7. Cover and cook for another 5 minutes (add water if pan is dry).

  8. Once greens are nice and soft, remove from heat and add a squeeze of lemon to finish. 

  9. Tastes great with mashed potatoes and your favorite protein, or with beans and rice.
