Easy Kale and Onions
Ingredients:
1 Tbsp. olive oil or butter
1/2 onion, finely chopped
1-2 garlic cloves, finely chopped or a dash of garlic powder
1 head kale or collard greens
Salt to taste
Squeeze of fresh lemon juice
Directions:
Wash the kale (or collards) and remove the center rib.
Finely chop the leaves and set aside.
In a large pan over medium heat, warm the oil and add the chopped onion. Cook until soft and golden.
Add the chopped garlic and a pinch of salt.
Add the chopped greens and a splash of water. Stir and cover pan with a lid.
Cook for about 5 minutes. Stir and add salt to taste.
Cover and cook for another 5 minutes (add water if pan is dry).
Once greens are nice and soft, remove from heat and add a squeeze of lemon to finish.
Tastes great with mashed potatoes and your favorite protein, or with beans and rice.
