Salmon Salad

Ingredients:

  • 2 (5-6oz) cans salmon, drained

  • 1/3 cup mayonnaise

  • 1 stalk celery, finely chopped

  • 3 tablespoons finely chopped red onion

  • 1 tablespoon fresh dill or 1 teaspoon dried dill

  • 1-3 teaspoons fresh lemon juice (to taste)

  • 1/4 teaspoon black pepper

  • 1-4 tablespoons grated pickles or relish (to taste), optional

  • Optional additions:

    • Chopped apples

    • Slivered almonds or chopped walnuts

    • Garlic or onion powder

    • Paprika

    • Fresh chives or scallions

    • Dijon or yellow mustard

Directions:

1. In a medium bowl, combine drained salmon, mayonnaise, celery, red onion, dill, lemon juice (if using), black pepper and pickles/relish.

2. Stir well and add any additional mayonnaise until desired consistency is reached. Taste and adjust seasoning to your liking.

3. Serve salmon salad as a sandwich, in a lettuce wrap, on a bed of greens or with cucumber slices or crackers.

4. Store leftovers in an airtight container in the fridge for 4-5 days.
