Tuna Brown Rice Salad

Ingredients:

  • 3 cups cooked brown rice

  • 4 to 5 oz canned tuna*, drained

  • 3/4 cup chopped cucumber

  • 3/4 cup chopped tomato

  • 3/4 cup chopped bell pepper

  • 1 large celery stalk, chopped

  • 1 tablespoon capers or chopped pickles

  • 1/4 cup minced parsley or herb of choice, optional

  • Salt and pepper to taste

  • Vinaigrette:

    • 2 tablespoons lemon juice

    • 2 teaspoons honey

    • Pinch dried oregano

    • 2 tablespoons olive oil

    • Salt and pepper to taste

 Directions:

1. In the bottom of a large bowl, whisk together the vinaigrette ingredients.

2. Into the bowl with the dressing, add the cucumber, tomatoes, bell pepper, celery, capers or pickles, parsley, tuna and cooled rice. Stir to combine.

3. Pour in the lemon vinaigrette. Stir to combine. Taste and adjust seasonings to your liking.

*You can swap out the tuna for canned salmon, canned chicken or garbanzo beans. You can also swap out the vegetables and herbs for ones you have on hand or ones you prefer.
